Low and slow is the secret to deliciously-tender beef jerky. Depending on the thickness of the meat, we cook our jerky from 2.5 to 5 hours. Temperatures during the cook cycle average between 75° to 85° C. This range of temperature ensures that the beef jerky is fully cooked. During this cooking process, the humidity level within the oven remains constant. The consistent level of low humidity combined with the hot temperature creates a shelf-stable beef jerky that requires no refrigeration. The jerky is ready for the final step before the snacking can begin.
